Top 5 Irresistible Pancake Recipes

Pancake day is right around the corner, this year it falls on February 13th, so it’s time to get your plan of action sorted whether you’re dieting or not.

It’s the ideal excuse for a respite from the New Year’s diet, which makes considering the day is the predecessor to Ash Wednesday when Christians start lent and fast from certain foods. We believe the key to a sustainable diet is to allow treats in moderation.

But that’s not to say a healthy Pancake isn’t possible. While the pancakes have almost become synonymous with sugary spreads and unhealthy toppings, it’s easy enough to keep it healthy without sacrificing the taste.

Whether you decide to diet on the day or not, we’ve included healthier options in the mix, so you’ll still be able to join in!

1. Banana & peanut butter protein pancakes

Ingredients:

  • 1/3 scoop oats
  • 1 scoop protein powder
  • 2 eggs
  • 1 banana
  • 25g peanut butter
  • 2 tsp almond milk

Place all ingredients into blender and blitz until smooth. Pour contents into a preheated pan and cook until golden brown.

Top Tip: To keep pancakes low-cal, only use 50% of egg yolks. Although the yolk is a nutritious source of essential fatty acids and vitamins, it’s the most calorie-dense part of the egg. So it’s great if you want to up the protein while keeping the meal low calorie.

2. Classic fluffy pancakes

Ingredients:

  • 135g plain flour
  • 1tsb baking powder
  • ½ tsb salt
  • 2 eggs
  • 2 tbsp butter
  • 200ml milk (or alternative)

Place the ingredients, excluding the milk into a large bowl. Pour milk and whisk until you have a smooth batter. Pour into preheated pan and heat until golden brown. Add toppings of choice.

3. Blueberry Pancakes

Ingredients:

  • 75g blueberries
  • 5 tbsp. sugar
  • 135g plain flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 200ml buttermilk (or alternative)
  • 2 tbsp. butter
  • 2 eggs

Combine all ingredients excluding buttermilk and blueberries. Pour buttermilk and whisk until batter is smooth. Pour batter into preheated pan, drop blueberries into the liquid mixture. Cook until golden brown.

Tip: Use a pancake pan to achieve that perfect pancake shape everytime.

4. Chocolate protein pancakes

Ingredients:

  • 1 large scoop chocolate protein powder
  • 1 cup oats
  • 2 eggs
  • 1 tbsp baking powder
  • 50g chocolate
  • 75g blackberries

Add the protein powder, oats, eggs and baking powder into a blender and process until smooth. Pour batter into pan and cook until golden brown. Place chocolate into separate pan and cook until melted, drizzle on top of pancakes and add a handful of blackberries.

5. Bacon & Maple Syrup Pancakes

Ingredients:

  • 3 bacon rashers
  • 125g plain flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 200ml buttermilk (or alternative)
  • 2 tbsp butter
  • 50ml maple syrup

Oil and preheat pan and fry bacon for 3 – 4 minutes until crisp. While bacon cooks combine ingredients and whisk. Place batter into pan and cook until golden brown. Top with bacon and maple syrup.
